- Para la pasta hacemos un volcán con la harina y cascamos el huevo dentro. Amasamos poco a poco hasta que quede bien ligado. Si nos queda muy seca añadimos un poco de agua y si esta húmeda un poco de harina.

- Dejamos reposar media hora la masa envuelta en papel film. Enharinamos la encimera, extendemos bien la masa con un rodillo hasta tener una lámina fina y cortamos en cuadrados/rectángulos.



- Hervimos la pasta 3-7 minutos en abundante agua dependiendo del grosor (está lista cuando flota) con cuidado de que no se peguen unas con otras y reservamos.

- Salteamos el ajo, la cebolla, el pimiento y las zanahorias, previamente limpias y troceadas muy finas, hasta que tomen color.

- Agregamos la carne desapelmazando con un tenedor hasta que tome color, echamos el vino, subimos el fuego y esperamos que se evapore. Cubrimos con el tomate triturado, echamos orégano y albahaca al gusto, y dejamos reducir removiendo de vez en cuando a fuego muy bajo.


- Mientras hacemos la salsa bechamel poniendo en un cazo la mantequilla, cuando esté derretida echamos la harina y damos unas vueltas para que se tueste. Vertemos poco a poco la leche caliente, y sin dejar de remover, cocemos unos 10 minutos hasta que espese. Añadimos una pizca de nuez moscada y pimienta. Si quedan grumos, batimos con la batidora.

- Para montar la lasaña alternamos capas de carne-pasta-bechamel-carne hasta llegar casi al borde de la fuente. Acabamos con una placa de pasta que cubrimos con salsa bechamel y espolvoreamos con queso rallado para gratinar.

- Horneamos durante 30 minutos y gratinamos durante dos. Servimos inmediatamente bien caliente y ¡lista!
