    Partimos las berenjenas por la mitad, hacemos unos cortes en la carne de la berenjena, añadimos un poquito de sal y disponemos en la bandeja del horno con la piel hacia bajo. Llevamos al horno 30 minutos.
  2. Picamos la cebolla en trocitos muy pequeños, salteamos en una sartén con un poquito de aceite de oliva. Cuando la cebolla empiece a estar tierna, añadimos la zanahoria picada en trocitos muy pequeños, dejamos pochar.
  3. Retiramos las berenjenas del horno y con cuidado de no quemarnos vamos quitando la carne de la berenjena (hay que ir con cuidado de no romper la piel de la berenjena porque la vamos a utilizar para rellenarla).
  4. Picamos la carne de la berenjena en trocitos pequeños y añadimos junto la carne picada, dejamos cocinar durante 5 minutos más.
  5. Añadimos el tomate frito, una pizca de pimienta y dejamos cocinar 3 minutos más.
  6. Preparamos la salsa bechamel para gratinar las berenjenas

En un cazo vamos calentando la leche, en una cazuela añadimos el aceite y dejamos que vaya cogiendo temperatura, incorporamos la harina y freímos en el aceite sin llegar a dorarla.Incorporamos la leche poquito a poco (estará calentita) con unas varillas sin dejar de remover para evitar los grumos. Cocinamos unos 15 minutos hasta que la bechamel empiece a espesar.
    Añade un poquito de sal y una pizca de nuez moscada.

  9. Rellena las berenjenas con el relleno de carne, sobre el relleno echa un par de cucharadas de bechamel y sobre la bechamel queso rallado. Lleva al horno a 180º calor arriba, hasta que se gratine el queso.
