- 4 patatas
- 1 berenjena mediana

- Pelamos las patatas y las cortamos en trozos y las ponemos cocer en una cocerola con agua hirviendo y sal.
- Cuando estén cocidas las escurrimos, las ponemos en un bol y las machacamos para hacer un puré, le añadimos 3 cucharadas de aceite, un huevo batido y pimienta removemos todos bien, y lo ponemos en el fondo de una fuente apta para el horno y cubrimos todo, alisamos y reservamos

- Picamos pequeña la cebolla y la berenjena, pelada, ponemos una sartén al fuego con un poco de aceite y pochamos la cebolla, cuando esté dorada, añadimos la berenjena y pochamos todo, tapado, con un poco de sal unos 8-10 minutos. Reservamos.
- Hacemos un majado en un mortero con los ajos, perejil, sal, pimienta molida. Lo añadimos a la carne picada. En el mismo mortero batimos un huevo y lo añadimos a la carne, añadimos el sofrito de berenjena y cebolla y pan rallado, mezclamos bien y formamos las albóndigas.
- Freímos las albóndigas en aceite caliente. Solo las doramos, (luego se terminan de cocinar al horno)
- Las colocamos sobre el puré de patatas y ponemos por encima la salsa de tomate al que añadimos orégano y tomillo. Metemos al horno 30 minutos a 200°, con ventilador.


- Sacamos del horno, ponemos queso rallado por encima y metemos 10 minutos más al horno.

- Sacar del horno y listo!!
